International trade of food and consumer products has reached very high volumes all over the world. Achieving high performance in cold chain logistics management, which includes all transportation, storage, distribution and retail activities of these products, which must be kept at a certain temperature level, is essential. In cold chain logistics activities, it is necessary to ensure the traceability of external elements such as temperature and humidity and to perform the necessary interventions without delay. The Internet of Things and other high technologies have high potential to increase traceability in cold chain logistics. However, it has not been possible for them to become fully widespread worldwide and reach their full potential. In this context, there is a need for studies that will increase awareness and guide the potential use these innovations. In this study, the structural layers of the Internet of Things and the technological innovations that can be used in these layers are explained. Also, how these can be used to meet the needs of consumers and all stakeholders of international trade is described. Attention has also been drawn to some potential problems and needs that the Internet of Things brings together with all its benefits.
