Altın Gıda Olarak Kuskus: Fransa’da Sömürgesel Dolaşım, Kültürel Yeniden Kodlama ve Asimetrik Tanınma

Öz

Bu çalışma, kuskusun Fransız sömürgeciliği ve sömürgecilik sonrası bağlamlardaki tarihsel dönüşümünü inceleyerek "Altın Gıda" çerçevesini geliştirmektedir. Bu kuramsal yapı, bir gıdanın gastronomik olarak değer kazanması ile o gıdayla ilişkili toplulukların gördüğü toplumsal tanınma arasındaki paradoksal eşitsizliği açıklamaktadır. Nitel doküman analizine dayanan teori geliştirici tek-vaka çalışması, kuskusun çok katmanlı mutfaksal yolculuğunu izlemektedir. Bulgular, kuskusun Fransız yemek kültürüne kolonyal egzotikleştirme, askerî-idari politik kommensallik, endüstriyel standartlaştırma ve postkolonyal göç gibi kesişen mekanizmalar aracılığıyla dâhil olduğunu göstermektedir. Ancak bu mutfaksal ana akımlaşma, Fransa'daki Mağrip kökenli toplulukların maruz kaldığı yapısal eşitsizliklerle bir arada var olmuştur. Çalışmada "Altın Gıda"; güç-asimetrik dolaşım, genişleyen değerlenme, seçici kültürel yeniden kodlama ve asimetrik tanınma olmak üzere dört ölçütle tanımlanmaktadır. Sonuç olarak araştırma, yemeğin anlamsal ve kültürel olarak benimsenmesinin, onu üreten toplulukların eşit toplumsal kabul görmesini sağlamadığını kanıtlamaktadır. Kuskusun 2020 yılındaki UNESCO tescili ise yemeğin yaşayan, müşterek bir Mağrip mirası olarak sömürgecilik sonrası yeniden eklemlenmesini temsil etmektedir.
